Menu Plan For November 22nd-28th

Hello All,

Happy Thanksgiving!!! Yes, I know I am early but I am so excited. It has been one of the fastest weekends ever. My husband had to work on Saturday from 9-4 and boy it just made the weekend wiz by. Friday night we went Shopping with my Mom and Aunt. We went to Kmart and they were having a Better than Black Friday Sale! Awesome Awesome Deals. We finally got our Christmas Tree. 7ft Tree for $79 bucks talk about a DEAL! Also done some Christmas shopping fro some family and friends. Not done quit yet but I am hoping by the 2nd week in Dec we will have everything :). Friday night we also ate at a place called Village Station. Seafood Buffet for $9.95 ahhhh it was amazing! Had the best fish I had had in a LONG time.

Saturday I went grocery shopping with my mom and baby girl Khloey. Had to stock up for the week and all the Thanksgiving goodies that we needed. Came home and just lazied the day away while my husband was working lol. When he go home we went over to a friends house and had supper and watched the movie Grown Ups. It was hilarious!

Today, Church of course. We made some Turkey Handprints in our Sunday School Class. *I am a Sunday school Teacher for ages 0-3 - I LOVE IT!* Here is what it looks like! This is not any of the ones we did I forgot to get pictures but this what they looked like :)


Also today we put up some Christmas Lights outside. I was dieing to decorate :). And we have a tradition of putting the Christmas Tree up the Night after Thanksgiving so I wanted to keep with tradition so I just went ahead and put lights up outside lol! Anyways, hubby gets to go into work 2 hours late tomorrow so we are going to watch a movie before bed! Then in the morning going to eat breakfast :)!

Sunday- Smothered Pork Chop's*NEW* w/ Broth Simmered Rice*NEW*, Veggies

Mexican Rice

Mexican Rice

Ingredients:

3 Tablespoon Olive Oil
2 Tsp Minced Garlic (Bout 3 to 4 Cloves)
½ Cup onion; diced
1 Cup Rice
¼ Cup Diced Canned Tomato’s
¼ Cup Kernel Corn
Juice from 1 can Tomato’s
1 to 1 ¼ cups Chicken Broth
1 ¼ tsp Cumin
½ tsp Salt

Directions:

1.Sautee Garlic & Onions in Olive Oil.

2.Add Rice and Sautee til lightly browned 3 to 5 mins.

3.Add in Tomato’s & Corn. Stir.

4.Add in 2 cups of liquid. Pour juice off of Tomato’s into Measuring up then fill with chicken broth til reaches 2 cups.

5.Add in Salt & Cumin. Stire and Bring to boil. Reduce to low. Cover. Cook for 20 mins. Do not Lift lid until 20 mins have past. Fluff with fork. & Serve.



Cheesy Beef Enchilada's

These turned out amazing. Make you think twice about going out for Mexican!

Cheesy Beef Enchilada’s

Ingredients:

1 1/4 cans Enchilada Sauce (I used El Paso)
1 Pd Lean Ground Beef
1 Tsp Olive Oil
1 Small Onion; Diced (1/2 cup worth)
2 Gloves Garlic; Minced
6 Flour or Corn Tortilla’s; Warmed
1 Bag or 2 Cups Shredded Monterrey Jack Cheese

Directions:

1.Brown beef, Drain and Set aside.
2.Saute onions, and garlic in olive oil for 3 mins.

3.Add in Browned Beef and Cook addition 3 mins.

4.Add in 1/2 can Enchilada Sauce and 3/4 cup Cheese. Stir til Melted.


5.Drizzle a little more Enchilada Sauce on the bottom of casserole dish.

6.Spread meat mixture evenly between Tortilla’s its about 1/4 cup per Tortilla. Roll. Place open side down.

7.Spoon 2 to 3 Tablespoons Enchilada Sauce on top of each Roll. Top with Remaining Cheese.



8.Bake 375 for 20 mins or until lightly browned.

Carmel Pecan Chocolate Cake

Hey everyone,

We had Thanksgiving at Church on Wednesday! This was what I contributed and it was darn good lol! Enjoy!



Carmel Pecan Chocolate Cake








Too Much Chocolate Cake

Ingredients:

1 Box Devils Food Cake Mix
1 5.9oz Box Instant Chocolate Pudding
4 eggs
1 Cup Oil
1 Cup Sour Cream
½ Cup Water
1 Bag Chocolate Chips (Optional)

Directions:

1. Blend together Cake mix & Instant pudding mix.

2. Mix in eggs, oil, sour cream and water.



3. Fold in Chocolate Chips
4. Bake in a buttered & lightly floured bunt pan for 50-55mins.

*Note* If you bake this as cup cakes or regular layer cake it takes about 25-30 mins! I would start checking after 15 mins and if not done let it go for 25 it too mine 25 mins and I baked it in a 9 inch cake pan!
*Note 2* I did not add chocolate chips this go around but I have in the past and it so good! But I feel when you add the chocolate chips you do not need icing just a little powdered sugar MMMMM!

German Chocolate Cake Frosting

Ingredients:

1 cup evaporated milk
1 cup brown sugar
3 egg yolks
1/2 cup butter
1 teaspoon vanilla extract
1 cup chopped pecans
1 1/3 cups flaked coconut

Directions:

In a large saucepan combine evaporated milk, brown sugar, egg yolks, butter and vanilla. Cook over meduim heat, stirring constantly, until thick.*NOTE* It took me almost 30 mins so it is a Process but SOOO worth it when it is done* Remove from heat and stir in pecans and coconut. Let cool to room temperature before spreading on cake.






*For this cake I omitted the coconut and just used 1 1/2 cups pecans. But feel feel to use the coconut it would taste awesome my mom does not like coconut.* Also I found out that this Icing recipe is HUGE! I could have probably halved it and had enough icing so if you dont want left over icing I would half the recipe or cook more cake LOL!

Easy Cheesy Potato Au Gratin

Easy Cheesy Potato Au Gratin

Ingredients:
2 1/2 pounds of potato's *Half of a 5 lb bag*
1/4 cup butter
3 Tablespoons of flour
Salt & Pepper
2 1/4 cups milk
3 1/2 cups of Sharp Cheddar Cheese

Directions:
1. Peel & Slice potato's thin. Set aside and soak in cold water.

2.Melt butter in a sauce pan.

3.Wisk in flour, salt, and pepper. Cook for 1 min.

4.Add 1 cup of milk whisk well. Then add rest of milk. Cook on Medium high til thickened. *It will coat the back of a spoon*





5.Add in 2 cups of cheese. Turn on low and melt. *After cheese is melted taste and adjust seasonings.*





6.Layer Potato's, Cheese, Potato's, Cheese, Until all ingredents are used. Top with remaining 1 1/2 cups cheese. *Make sure you salt and pepper each layer of potato's*









7. Bake at 350 for 1hr 30mins.




Cheese Burger Pizza

Cheese Burger Pizza

Ingredients:
Canned Biscuits of Your choice(You can get the 5 grand, or 10 Texas style or butter me nots)
1 Lb Ground Beef
1 cup ketchup
1 can tomato soup
1 1/2 tablespoons chili powder
1 to 2 cups Shredded Cheddar Cheese
Mustard

Directions:
1. Pat and Stretch out Biscuits. Bake according to Package Directions.

2. Brown Beef and Drain.
3. Add beef back to the pan with ketchup, soup, and chili powder. Stir well, Cover and Simmer for 10 Min's.

4.After biscuits are out of the oven spread with a little mustard. Then add some meat sauce(as much as you like) and Top with Cheese.





5.Place under broiler to melt cheese.

Corn Bread Fritters

This corn bread fritter I made up using the cornbread breading for the corn dogs on Mommy's Kitchen's WebsiteMommy's Kitchen
yet I just Tweeked it a bit.

Corn Bread Fritters:
1 1/4 cup buttermilk
2 Large eggs
1/4 Cup Sugar
1 Teaspoon salt
2 Teaspoons baking powder
1 1/3 Cups corn meal
2/3 Cup flour
Oil or Shortening for Frying

Directions:

Mix together buttermilk, eggs, sugar, and salt.
Mix together baking powder, corn meal, and flour.



Slowly mix your dry ingredients into your wet. Heat up your oil. Once its up to temperature spoon in your fritters. Oil should be in between 325 and 350. Drain on a paper towel.
