Menu Plan January 31st - February 5th

Hi Everyone,

So, I have been MIA! Was getting things ready for my Daughters party! It was Saturday! We had 60 people and it turned out GREAT! Best party ever!! Khloey had a blast and got extremely spoiled!!! That is pretty much all that has went on! Anyway here is our Menu for this week :)

***Menu Plan January 31st - February 5th***

Monday: Meatloaf, White Cheddar & Roasted Garlic Mashed Potato's*NEW*, and Creamed Corn
Tuesday: Chicken & Stuffing Casserole, Green Beans
Wednesday: Breakfast for supper! [Rice, Eggs, and Sausage] for Dessert Banana Nut Pancakes*NEW*
Thursday: Chicken & Pastry *Chicken Salad*NEW* for the Hubby, he is not a pastry fan*, and Garden Peas
Friday: Easy Peasy Lasagna
Saturday: Going to search and pick a new Recipe then I will share it I have not found it yet :)!

Baked Potato Casserole

Hey everyone,

Anyways I wanted to point out that in my recipes I use Fat Free, Low fat, and Reduced Sodium. When making recipes I always sub the healthier alternative if available. I have been doing this sense after Christmas and I have lost 15 pounds in doing so! I have herd a couple people say your going to fatten me up and such lol! But if you eat the serving size with subbing in the healthier option of ingredients you do not have to worry about that! Now the desserts I post hmmmm not so much but as you can see I do not post many desserts but sometimes you have to indulge a little bit :)!

This recipe is no exception. If you were to make this with all the regular ingredients it would be 1794 Whole - 299 per serving(6 servings). Using my recipe it is 975 Whole - 162.5 Per serving(6 servings). So using my recipe you save 136.5 Calories per serving! I just wanted to point this out! I do this with all of my recipes sense after Christmas time I think maybe a little before! So I am not giving yaw junk I am really thinking about Fat, Calories and Health! I mean come on I feed my daughter this stuff :)!

Baked Potato Casserole

Ingredients:

8 Large Potato's or 10 Medium to Small Potato's ( I use red)
1/4 cup Fat Free Sour Cream
1/4 cup Light Butter
6 Slice Low Fat/Sodium Bacon; Diced, Browned and Drained (What i used was 40% less fat/Low Sodium) 210
1 Bag Fat Free Cheddar Cheese*1 3/4 Cups*

Directions:
1. Peel, And Dice Potato's. Boil til fork tender. Drain.

2. Return to pot mix in all the sour cream, half cheese, all the butter, and half bacon. Mix well.


3. Put in a Sprayed Casserole dish. Top with remaining bacon and cheese. Bake at 375 for 30 mins.

Vegetable Fried Rice

This was my first time making fried rice. It was so good. It beat the restaurants to me. The restaurants never seem to have much flavor to me but NOT THIS ONE... It has so much flavor and its so delicious!!!

Vegetable Fried Rice

Ingredients

1/4 cup finely chopped onion
1Tablespoon Olive oil
2 garlic cloves, minced
3 tablespoons reduced-sodium soy sauce
1 tsp Apple Cider Vinegar
1 teaspoon brown sugar
1/4 teaspoon salt
3 cups cold cooked rice * Cook it the night before, Instead of 3 cups water 1 1/2 cups rice. Use 3 cups Chicken Broth 1 1/2 cups rice. Let it cool then put in the refrigerator over night til you are ready to prepare you fried rice. *
1 cups Chopped Baby Carrot
1 cup Frozen Peas thawed completely

Directions

1. In a nonstick skillet, saute onion in oil until tender.
2. Add Carrots and Peas cook til tender.
3. Add garlic; saute 1 minute longer.

4. Add the Soy Sauce, Vinegar, brown sugar, salt ; bring to a boil. Reduce heat to medium; cook and stir for 2 minutes. Add Rice and cook for 2 minutes longer.


Easy Pepper Steak

My mom LOVES pepper steak that's the only thing she eat at a Chinese Restaurant besides Fried Rice. But this recipe was to die for. Next time I am putting it in the cock pot sense this will be so easy to convert to a crock pot recipe! So definitely try this its hands down the best Pepper Steak I have had.

Easy Pepper Steak

Marinade:
- 1/4 cups Soy Sauce
- 1 Tsp Sugar
- 1 Tsp Vinegar
- 1 Tablespoon GOYA Adobo All Purpose Seasoning

1 pound boneless beef sirloin steak, 3/4 inch thick
3 tablespoons cornstarch
1 (14 ounce) can Swanson® Beef Broth* Its 2 cups*
3 tablespoon soy sauce
1 Tsp Honey
2 Clove garlic
2 cups fresh or frozen green or red pepper strips
1 medium onion, cut into thin wedges
1 Tsp Olive oil


Directions

1. Slice beef into very thin strips and Marinated at least 1 hour. Over night is best. Mix cornstarch, broth, soy and garlic.

3. Remove steak. Add peppers and onion in olive oil saute til tender.


4. Add steak and cornstarch mixture. Cook and stir until mixture boils and thickens. Serve over rice.

Easy Pepper Steak(Crock Pot Style)

Marinade:
- 1/4 cups Soy Sauce
- 1 Tsp Sugar
- 1 Tsp Vinegar
- 1 Tablespoon GOYA Adobo All Purpose Seasoning

3 tablespoons cornstarch
3 tablespoons Cold water

Crock Pot Directions

2. Stir-fry beef in nonstick skillet until browned and juices evaporate. About 14 Min's is what it took me!
3. Place Browned steak in to the crock pot w/ Peppers and Onions. Pour over Beef Broth, Soy Sauce, Soy Sauce, Honey, & Garlic Mixture. Cook on Low for 6 hours. High for 4 hours.
4. About 20 Min's before serving mix Cornstarch and Cold water and add to crock pot. Allow to thicken. Serve w/ or over rice.

BBQ Chicken Pizza

BBQ Chicken Pizza


Ingredients:
1 Lb Boneless/Skinless Chicken Breast
McCormick Montreal Chicken Seasoning
GOYA Adobo All Purpose Seasoning
Salt
Pepper
1 Tablespoon Olive Oil
1/2 Bottle BBQ Sauce; I use Sweet Baby Rays Honey
1 Bag Shredded Mozzarella Cheese
1 Pizza Crust; I made one homemade

Directions:

1. Diced up Chicken Breast. Season both sides with Montreal, Adobo AP, Salt, and Pepper. Saute in a pan w/ Olive Oil until browned and cooked thru took me 5 min per batch and I done 3 batch. Its best to not over crowd the pan if you do you want get a good sear on the chicken. Set chicken aside to drain on a Paper Towel


2. Bake Homemade Pizza Crust for 10 Min's remove from oven* if you are using a different one cook it for half the time the recipe or package says *. Spread BBQ Sauce *As much as you want*. Top with Chicken. Then Cheese. Bake 425 for 10 - 15 more Min's until cheese is melted and lightly golden.

I adapted this from Mommy's Kitchen I made a few changes!

Quick Pizza Crust

1 - 1/4 oz packet of yeast*this was 1 tablespoon*
1 - cup warm water
1 - tsp Honey
1 - tsp salt
2 - tablespoons Olive Oil
2 1/2 - cup all purpose flour + Additional for Kneading. As I was Kneading I added about 1 cup more. You want to add more until it is no longer sticky


1. Dissolve yeast in warm water and add honey. Let yeast sit about 10 minutes (you want it good and foamy).
2. Stir in remaining ingredients until blended. Beat vigorously 20 strokes.
3. Remove the dough from the bowl and kneaded it until it is no longer sticky.
4. Place the dough in a greased bowl and warm bowl. I stick my oven safe bowl in the oven at 250 for about 10 to 15 Min's. It will be hot so be cautions. Ad dough to the bowl turning dough to coat all sides. Cover with damp towel and Allow dough to rest 20 Min's it will double in size.
5. Preheat oven to 425, spread dough onto a lightly greased baking sheet . Top with desired toppings and bake for 20 minutes This makes 1 - 14 inch pizza.

January 23rd - 29th Weekly Menu Plan

Hello Everyone,

So today is good ole Saturday. Not being so go to me I have to say. My husband is at work to 4pm. I am really hoping this working Saturday’s stops soon its just so stressful and I hate he has to work SOO hard he deserves a whole weekend to rest. He got a new position so we are hoping once he switches his hours will be more reasonable. Tonight after he gets home. We are going to get ready and we are going to go Bowling with a Friend and her Boyfriend. Really looking forward to it!

Other then that. The weather suck as I mention in a previous blog. Its darn cold, 34 to be exact BRRRR. Suppose to have a of 25 tonight. Calling for some wintery weather. I am hope it is not much and is gone by Saturday. I have been working on my Daughters 2nd Birthday for over a month and everything is going so well I just do not want anything to ruin it or make we have to reschedule! So if you will help me pray it waits til after her Birthday Party is over!

Depending on weather this week we are suppose to go to our first Play Date Meeting on Wednesday. Looking forward to that. Then Khloeys Birthday is Thursday. I honestly can not believe my baby is going to be 2. I know you hear the whole “Oh, it feels like just yesterday I was bringing her home” all too much. But it is so true. It does no feel like I have been raising this amazing child for 2 years! Friday she has Shots, and her Well Baby check up. Or should I say Big Girl Check up :’(. I can’t wait to see how much she has grown sense last time at her 18 month Check up.

In Food this week I am trying some new recipes. I am excited to share them with you. So here is our Menu this Week.

Thursday- Chinese Chicken Satay*NEW*, Broccoli Mac & Cheese*NEW*
Friday- Salad & Chicken Nuggets, *WENDYS* Lol
Saturday- My Daughter Birthday Party so we will be eating Subs, Macaroni Salad*NEW*, Fruit & Veggies, Cake & Ice Cream

Lemon Pound Cake




Ingredients
1 cup butter; softened
3 cups sugar
6 eggs; Room Temp
5 tablespoons lemon juice
1 teaspoon lemon extract
3 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/4 cups sour cream; Room Temp

Directions
1. In a large mixing bowl, cream butter and sugar until light and fluffy, about 5 minutes.

2. Add eggs, one at a time, beating well after each addition. Stir in lemon juice, and extract.

3. Sift the flour, baking soda and salt; add to the creamed mixture alternately with sour cream. Beat just until combined. * Make sure you start and end with flour * And that all your ingredients are at room temp this is VERY important *

4. Pour into a greased and floured 10-in. fluted tube pan. Bake at 350 degrees F for 55-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

2 Puffed Pastry Recipes

I love Puffed pastry here are some of my favorite ways to use it…

***Puffed BLTS***
Thaw your puffed pastry and then cut each sheet into fours.
Place a cookie sheet and poke several holes with a fork.
Bake according to pkg directions.
After they are done let cool for about 5 mins. Cut each piece thru the middle.
You will have a top and bottom*Like bread*
Add mayo, bacon, lettuce, and tomato. ENJOY!





***Puffed Piggys***
Wrap your hot dogs in puff pastry. Bake according to pkg directions.
Top with Mustard, and ketchup. Even some chili YUMMY!
