Smothered Baked Chicken w/ Rice

I love Chicken!! I would eat it every night but my husband loves for me to mix it up. I was at a friend house when we lost power on the 26th because of the snow and her mom was cooking this up and it was so simple but SOOOO delicious!



Smothered Chicken:

Ingredients:
- 1 Lb of Chicken (Your Choice I chose legs)
- Salt, Pepper, and Goya Adobo All Purpose Seasoning
- 1 Can Cream of Chicken soup
- 1/4 cup milk

Directions:
1. Put chicken in a baking dish and season with salt, pepper, and AP Seasoing.


2. Bake at 350 for 25-35 mins. According to what type of chicken you are cooking.

3. Mix together cream of chicken soup with milk. Pour over chicken.


4. Put on broil for 5-10 mins until sauce adheres to chicken.

5. Serve over Rice.

Rice Recipe*this is how I make all my rice*:

Ingredients:
- 1 1/2 Cups White Long Grain Rice
- 3 Cups Liquid (Water, Chicken Stock, or Beef Stock)
- 1 Tablespoon Butter or Olive Oil

How To:
Put all ingredients in a pot. Bring to Boil. Turn to low, cover and cook for 20 mins. Do NOT remove the lid until the 20 min is up*This is the key to perfect rice*. Fluff with a fork. Serve.
