Crispy Waffles

I bought a new Waffle iron over the weekend 29 dollars at walmart! Found this recipe in some cards someone gave me a long time ago!

Ingredients:
-3 large eggs
-1 1/4 cup milk
-1/2 cup melted butter
-1 1/2 tsp vanilla
-2 cups flour
-1 tbs baking powder
-2 tsp sugar
-1/2 tsp salt

Directions:

1. In a large mixing bowl, beat whole eggs until thick.
2. Add milk, melted butter, and the vanilla continue beating mixture for 2 minutes.
3. Combine the dry ingredients, sift into egg mixture and beat well for 2 more minutes. **If necessary, add more milk ... batter should be about the consistency of pancake batter.**

Brush melted butter over the ridges of a hot waffle iron. Ladle the batter over the hot iron and bake according to iron instructions. Took me about 3 mins. When done, ridges on waffle will be deep golden brown and crispy.

You can fold in chocolate chips like we did and top with syrup. Or you can have them plan. Also a lot of people love to top it with cold fruit and whipped cream! One of my favorite ways is to dice some apple. Sprinkle with sugar and cinnamon just to coat the apples. Cook in a pan with 1 tsp melted butter until apples are soft and put that on the top YUMMM oh and of course some whipped cream on top!

This should make 6-8 waffles according to your waffle iron!
