It has been a pretty good weekend! Hate it's over tho!
Baked Apple Turnover's
Ingredients:
10 Granny smith apples
1 Lemon Juiced
1 1/4 cups sugar *plus some from sprinkling*
1 cup brown sugar
1/2 cup corn starch
2 tsp cinnamin *plus some for sprinkling*
1 tsp salt
5 cups of water
1 egg
1 tablespoon of milk
1 box puff pastry, Should have two crust in the box!
Directions:
1.Peel, Core, and Dice Apples. Toss in lemon juice.
2.In a sauce pan add sugar, brown sugar, corn starch, cinnamon, and salt. Mix Well.
3. Add 5 cups of water and mix well. Heat over high heat till boiling *stir constantly* let boil for 2 mins. Remove from heat and add apples.
4. Put back on the heat, bring to a boil, Turn heat to low and cover. Cook until apples are fork tender about 20 - 30 mins!
5.Let filling cool completely before forming Turnovers.
6.Preheat oven to 400.
7.Lay out put pastry and cut into 4's. Spoon 1-2 heaping tablespoons of the filling in the middle of each square.

8.Fold over over diagnaly and crimp edges with a fork. Cut a little vent in the top. Brush with egg wash *1 egg and 1 tablespoon milk wisked together*.
9.Sprinkle with cinnamon and sugar and cook for 10 - 15 min's *May take you longer, all ovens are dif.* They should be golden brown and puffed!
***The filling can make 16 turnover's. But don't half the recipe. Make what you want. Store in a freezer bag and freeze the leftover's to use a dif time.*** Great to have on hand***

Mini Meat Loafer's
Happy Friday,
Never thought it would get here lol. Me and Khloey just got back from town. Shopped at Wally World and got lunch with a friend. It is so humid outside that you can barely breath. We got a storm yesterday which knocked our power out for about an hour and a half. Thought with all that rain it would cool it off. NOOOOO of course not, it's even more muggy and humid today. Suppose to get some more storms tomorrow and Sunday but thank god only.....
YAY!!!!
So tonight we are having a cook-out at my friend Nikki's. And that's the extent to our plans this weekend lol. Hope everyone has a blessed weekend!

Mini Meat Loafer's
Ingredients:
2 lbs ground beef
2 eggs
2 tablespoons ketchup
1 peice of bread soaked in 3 tablespoons of milk
2 teaspoons paprika
Salt & Pepper (About 2 tsp of salt & pepper)
Topping:
1/2 cup ketchup
1/4 cup brown sugar
1 tsp paprika
Directions:
1.Soak Bread in 3 tablespoons of milk
2.Mix bread, ground beef, ketchup, eggs, salt, pepper, paprika.
3.Form Meat Loafs
4.Mix together topping. Ketchup, Brown Sugar, & Paprika. And top meat loaf's!
5. Cook at 350 for 40-45 mins.

Chocolate Chip Cookies
I found this recipe at SavorySweetLife!. I make a few slight changes because its what I had a on hand!
Chocolate Chip Cookies
Makes approx. 45-48 cookies using a sm-med 2tbl. cookie scoop
INGREDIENTS:
1 cup (2 sticks) salted butter, softened
1/2 cup sugar *I used 1/4 cup of splenda (because that's what I had)
1 1/2 cup packed brown sugar
2 eggs
2 tsp. vanilla extract
2 1/2 cups (12 oz) all-purpose flour *It said to weigh the flour. I did not and my cookies still turned out amazing*
1 tsp. smallish-medium coarse sea salt * I used regular table salt and it worked GREAT!*
1 tsp. baking soda
1 1/2 tsp. baking powder
2 1/4 cups semi-sweet chocolate chips *1 whole 12oz bag works great*
DIRECTIONS:
1.Preheat oven to 360 degrees.
2.Cream butter, sugar, and brown sugar until it is nice and fluffy (Took me about 5 mins).
3.Add both eggs and vanilla and beat for an additional 2 minutes.
4.Mix together baking soda, baking powder, salt, and flour. Add to sugar and egg mixture by the 1/2 cups, Until all is incorporated. *I use a spatula starting at this step*
5.Finally add chocolate chips until well distributed. The cookie batter should be somewhat thick.
6.Drop about 2 tablespoons of dough or use a medium cookie scoop and plop the batter onto a baking sheet lined with parchment paper. Bake for 12-14 minutes until the edges are nice and golden brown. Remove from heat and allow the cookies to stay on the cookie sheet for an additional 2 minutes. Remove and let cool. *I used a greased stone so I did not use the parchment paper*
***I only cooked 6 cookies. So I rolled the rest in a log. Covered in plastic wrap and froze it. Now I cut what I want and cook when I want. Works out great.***

Sorry!
Sorry I have not posted in a few day! I just wanted to stop by and fill yaw in! One of my friend's moved to NC from GA so I helped her get settled into her house!
Today has been a pretty good day. It's a billion degrees outside it feels like to me! I am so ready for FALL, WINTER, & SPRING! I think its a blessing to have 1 HOT season and 3 Cooler/Cold seasons lol!

Buffalo Chicken Pizza
I made a crust that I found @ Pizza Dough
Buffalo Chicken Pizza
Ingredients:
1 Pizza Crust
1 lb Chicken Breast
3 1/2 cups Monterrey Jack Cheese(Shredded)
1 Small Bottle hot sauce
1/4 cup butter*I use ICBINB(I can't believe its not butter)
1 1/2 tsp McCormick Montreal Chicken Seasoning
1 tsp salt
1 tsp pepper
Directions:
1.Mix together Butter and Hot sauce*Not hot enough simply add more hot sauce*
2.Dice Chicken and Mix in McCormick Seasoning, Salt, and Pepper
3.Put in a non stick skillet with just a drizzle of Olive oil or a little butter will do.
3.When just turned white about 3 Min's, Pour in Butter mixture, Turn to medium low, Cover & Cook for about 7-10 Min's.
4.Spread out crust or use premade crust.
5.Put half the cheese on the crust, The chicken and Sauce mixture, Then other half of the cheese.
6.Bake at 400 for 10-15 Min's till Cheese is lightly browned and Bottom of the crust is crispy and browned.

TGIF YAY!
Good Morning,
Just stopping in. I am so glade that it is Friday. We didn't get the all the rain I was hopping for yesterday but we got a little. Plans for today are Grocery Shopping, Washing Laundry, Sweeping, Moping, and Vacuuming. Then tonight one for my good friends is coming over for Pizza night! So tomorrow keep your eyes peeled for 3 Pizza Recipes that I mentioned in my last post! Really excited about making them. I have made the Cheeseburger Pizza ever sense I could cook. But the Buffalo Chicken & Apple Pie Pizza's are new for me :D!
Saturday me and hubby are going to go on a date. Early in the morning we are going to take off and go to the beach. This will be the first time we have been without Khloey sense she has been born. Kind of a bitter sweet moment I guess you could say. I am not sure if it is just me or maybe all moms but I feel so guilty when I go out by myself w/o my baby girl. But as my mom has explained to me its good for her and me to have some time apart from each other because she is very attached me.
I hope everyone has a wonderful and BLESSED weekend. I am sure it will fly by so blink as little and possible and enjoy it to its fullest.

Ta Da It's Thursday,
Good Morning :D,
I am so thrilled to say that it is Thursday and only 20 hour's til my weekend start's. I am not so trilled to say this is our Forecast for today!
***Partly sunny. Scattered showers and thunderstorms... mainly this afternoon. Hot with highs in the upper 90s. Southwest winds 10 to 15 mph with gusts up to 25 mph. Chance of rain 30 percent. Heat index values up to 107. Thursday night: Mostly cloudy with scattered showers and thunderstorms. Lows in the upper 70s. Southwest winds 5 to 10 mph. Chance of rain 50 percent. Heat index values up to 105 early in the evening.***
The heat is what I am not look forward to but as for the RAIN as I say "BRING IT ON BABY" lol. We had a short shower about 3-4am and it sound great on our rough but it has made it so muggy outside this morning.
No recipes today sorry to say but I will have you 3 on Friday night or Saturday morning. We are having Pizza night Friday night as I posted yesterday. The pizza's I will be making is Buffalo Chicken Pizza, Cheeseburger Pizza, & Apple Pie Pizza for dessert.
No plans really today beside trying to stay cool and keep the house clean sense I will be having company Friday night. I hope everyone has a great Thursday, Keep smiling today cause tomorrow is FRIDAY :D!
