The one thing I LOVE is a whole roasted Chicken! With this one I stuffed it! Some time's I toss some potato's and onions in some olive oil and seasonings like salt, pepper, garlic powder, and place them around the bottom of the chicken while its baking that is awesome as well!!
Ingredients:
1 Whole Chicken (Mine was about 5 pounds)
“Seasoning for chicken” *You can use what you like this is what I used*
Goya Adobo All Purpose Seasoning
Paprika
McCormick Rotisserie Chicken Seasoning
Olive Oil
Stuffing:
1 Box of Low Sodium Chicken Flavored Stuffing Mix (Such as Stove Top)
1 Large Onion
1 Tablespoon Butter
Directions:
Pre-Heat Oven to 375
1. Wash, Clean and Dry Chicken with a Paper Towel. Season with seasonings inside and out just to cover the chickens surface *DO NOT FORGER TO SEASON THE INSIDE OF YOUR CHICKEN IF YOU DO IT WILL NOT HAVE MUCH FLAVOR*
2. Prepare Stuffing according to Package Directions *Instead of the water it calls for I use homemade Chicken stock that I make with the giblets*
3. Saute onions on a medium heat in the butter until they are extremely soft and browned nicely! Fold onions into stuffing and Stuff inside turkey.
4. Drizzle Chicken with a little olive oil. Bake at 375 for 20 mins per pound! I baked my in a Roasting pan with the top on! Internal temp should me 180... I cooked my chicken 90 mins and it was perfect… If you want it extra crispy on top Remove top turn broiler on 500 and let it crisp up wont take long so keep an eye on it!

Some Product Review's
This post is going to be all about some products I have tried recently and just wanted to review them for everyone!
I have never before ate any kind of turkey product besides one time. Which that was a meatloaf and it was AWFUL! So I was scared to try anything else lol. As you all know I am working on losing of my weight. So at the grocery store I picked up the Precooked Link and Patty Sausage and I also picked up the turkey crumbles and Sausage and Pancake on a stick.
All of these products are awesome. Of course there is a slight change in flavor but it prepared right it is really hard to even tell a difference! So glade I tried these. So if you are skeptical as I was please try these I promise you want be sorry here are some pictures… If you click on the pictures it will carry you to a site that will share the nutrition value of these and how they think you should prepare them!!
This is the Link Sausage. I put them in the freezer they are separated in two packages each has 6 links the serving size is 3 links! I take them out the freezer put them in a pan with a little water. Cook them on high until they are thawed. Drain excess water and drizzle with a little olive oil to let brown up the outside.
I do the same thing with The patties as I do with the Link
I let these thaw in the fridge if they have been frozen or you can thaw in the microwave if you need them asap. I also add a little olive oil to brown these off a bit! You can add these to Breakfast Casseroles, Pizza, Pasta dishes, Make healthy biscuits and gravy, omelets and many more… I made Biscuits and gravy with this last night. After I browned off the sausage I put it in a bowl and set it aside. Added 3 tablespoons of LITE Country Crock Butter. Made a roue with 3 tablespoons flour. Then slowly added 2 cups of skims will. Season with salt and pepper. Whisked out all the lumps added the sausage bake in and let it cook on LOW for 15 mins so the flavors could release from the sausage! I carried my Aunt Some and she text me and says That was so good and it hit the spot thank you! She did not even know that it was turkey WIN!!!
Need a fast on the go type breakfast one of these and a side of some fruit is awesome! I wrap it in a paper towel microwave it for 45 seconds. Then in a pan on high heat I crunch up the outside! DELICIOUS!
This is the butter I always use! I used to use I can’t believe its not butter but found this has 50 calories rather then the 70 that ICBINB has!
I know you have noticed I have used the Goya Adobo All Purpose Seasoning for alot of things! I LOVE IT! Its great on chicken, pork, I even season some of my veggies like green beans, butter beans and stuff like that! It has a great flavor and you can find it in the Ethnic part of your grocery store!
The Rotisserie Chicken Seasoning is great on chicken of course but it is great to season homemade fries with it as well!!

Menu Plan February 28th - March 6th
Happy Monday to you all,
The weather here in South-Eastern NC has been just beautiful besides the strong winds but we are loving all the sunshine!
Saturday night me and Josh (My husband) went to our first Hockey Game, Fireantz Vs. Cottonmounths! It was great we were rooting for the Fireantz but they lost 1 to 3! Maybe next time :]
Sunday we spent some time with family. My uncle cooked a dinner to die for lol it was amazing!
Today me and Khloey (My Daughter) went to town and had breakfast with my Cousin Libby & Her Youngest daughter Melanie(4) at the FABULOUS Waffle Kitchen. Their breakfast is so good. Libby is 38 weeks pregnant and found out today at her doctor’s appt the baby is breach and if she does not turn they will be doing a Ce-Section March 9th. So praying that baby turns so she does not have to go thru that. I will be in the room with her either way and I am really looking forward to that!!
Weight-Loss Journey Up-Date: So this past week me and a friend started an exercise routine! We are walking 2 miles a day! And I can already tell a difference! We are going to walk the 2 miles a day for 2 weeks, then go up to 3 miles so on and so forth! I only weight myself every 2 months so The next time I weight will be in April so we will see then how far I have come then!!

Skillet Lasgana AkA: Bow Tie Lasgana
I found this on the Tasty Kitchen site. I changed a few things here is my version.
Ingredients:
1 pound LEAN Ground Beef
5 cups Bow Tie Noodles
3 cups Spaghetti Sauce
1 Tablespoon Olive Oil
1 Teaspoon Salt
1/2 Teaspoon Pepper
4 Garlic Cloves; minced
1/2 cups Mozzarella Cheese
1/2 cups Ricotta Cheese
Directions:
1. Brown Beef and Drain. Cook Noodles and Drain.
2. In a large skillet heat olive oil and saute garlic for 1 min. Add in pasta and saute for another minute.
3. Add in browned meat, spaghetti sauce, salt, pepper, mozzarella cheese, and ricotta cheese. Toss until everything is well mixed and cheese is melted. Serve!

Homemade Stove Top Mac & Cheese
Ingredients:
3 Tablespoons Butter (I used Light Country Crock)
2 Cups of Milk (I used Skim)
3 Tablespoons of Cornstarch
2 Cups Sharp Cheddar Cheese (I used the 2%)
3 Cups Pasta (I used Smart Taste)
Directions:
1. Cook, Drain & Set aside Pasta. Melt Butter in a sauce pan.
2. Mix Corn Starch and Milk together. Then pour it into the sauce pan with the melted butter. Bring to a boil. Mixing constantly until thickened. Add in Cheese. Turn to low and cook on low for 10 mins keep a close eye stirring every so often.
3. Add in Pasta. Mix well. Let sit for 5 mins then serve!

Baked Potato Wedges
Ingredients:
As many baking potato's as you need. I say 1/2 to 1 potato per person according to the size
Olive oil
Salt
Pepper
Garlic Powder
Goya Adobo All Purpose Seasoning or Your favorite French Fry Seasoning
Directions:
1. Wash, Wedge Potato's (I cut the potato in have and do straight cuts down)
2. Dry potato's well with a paper towel. And put in a bowl.
3. Toss potato's with olive oil and seasonings. Just enough olive oil to coat.
4. Place on a baking sheet and bake at 425 for 15 to 20 mins or until potatoes are fork tender and browned!

Kielbasa w/ Pepper & Onions
Ingredients:
2 Lbs of Polish Kielbasa; Sliced
1 Large Onion; Cut in strips
1 Large Green Bell Pepper; Cut in strips
2 Tablespoons Olive Oil
1. Brown Sausage in 1 Tablespoon olive oil. Drain on paper towel.
2. Add onions and pepper to same pan with 1 Tablespoon of olive oil. Til Browned.
3. Add Sausage to Peppers and Onions! Stir turn to low and cover let sit on low for 10mins. Enjoy.
