Chicken Enchilada Casserole

This is something I came of with one night. I wanted Enchilada's but wanted to have it a fast and easy way so WALA this is what I came up with! It is so fast and easy and so good! I use Pepper Jack cheese but you can use Monterrey to cut the spice! This recipe serves 4! I hope you enjoy!

Chicken Enchilada Casserole


Ingredients:
1 small Onion; diced
1 small Bell Pepper; diced
1 Lb Chicken Breast
1 Pckge of Taco Seasoning
½ to 1 can of Enchilada Sauce
4 (8inch) Flour Tortilla’s
8 oz Pepper Jack or Monteray Jack Cheese

Directions:
1. Place Chicken Breast in a saucepan. Add ¾ cup of water and taco seasoning. Bring to a boil. Cover. Turn to low and let simmer for 15 mins or until chicken breast are done.
2. Meanwhile sautee onions and bell peppers in a little olive oil or butter til soft.
3. When chicken is done remove from the stove and shred chicken with two forks and mix with the sauce. Mix in onions and pepper at this time also. **HINT** if your sauce is too watery then return to stove. Turn to high heat and cook stir constantly til sauce thickens.
4. In a 8 x 8 casserole that has been sprayed layer just enough enchilada sauce to cover the bottom. Then a tortilla, enough enchilada sauce to cover the tortilla, chicken mixture, Little Cheese, so on and so forth you will end with Chicken and cheese on top!

5. Bake at 400 for 15mins or until bubbley! Serve with Rice or just by itself!

Cream Cheese Mac & Cheese

Not sure if there is another recipe out there like this. But tonight as everyone was wanting Homemade Mac & Cheese I wanted to change it up a bit. I have known for people to put sour cream, or cottage cheese in mac and cheese so I said why not CREAM CHEESE! I have come to fall in love with cream cheese in savory dishes! Definitely give this one a try. Of course like all my recipe I use the fat free or reduced fat variety but of course you could use the full fat, this is just my preference.

Cream Cheese Mac & Cheese

Ingredients:

*8 oz elbow pasta (I use Ronzoni Smart Taste)
*3 Tablespoons Butter (Light Country Crock)
*3 Tablespoons Flour
*1 ½ Skim cups milk
*2 oz Reduced Fat Cream Cheese
*2 cups Fat Free Sharp Cheddar Cheese
*Salt and Pepper to taste

Directions:

1. Cook Pasta.
2. In a saucepan melt butter and stir in flour.
3. Pour in milk and Whisk all lumps out and cook til thickened.
4. Add in Cream Cheese and Melt.
5. Add in 1 ½ cups of the sharp cheddar and Melt. Taste and season with salt and pepper.
6. Mix Cheese Sauce w/ Pasta. Pour into a sprayed casserole dish. Sprinkle remaining Cheddar cheese on top. Bake at 400 for 15 to 20 mins or until Bubbling! To Brown cheese on top turn to broil and let cook for 3 - 5 more mins or until cheese is browned to your liking!

Fettuccine Alfredo

I love Fettuccine Alfredo. But I have always went through the whole process of the butter, flour, milk blah...blah...blah. When I found this fast and easy recipe on All Recipes I was so happy. I am not a big cream cheese fan so I was hesitant at first but decided to make it anyway. Boy am I glade. This was so good. I tweaked it a bit by substituting fat free and reduced fat ingredient's in place of the full fat and also adding garlic. YUMMMY!!!!

Fettuccine Alfredo

Ingredients:
*4 ounces uncooked fettuccine
*1/4 cup Skim milk
*2 Cloves Garlic; Minced
*1/4 cup butter or margarine (I use Light Country Crock)
*3 oz package cream cheese, cubed and softened (I used reduced fat)
*1/3 cup grated Parmesan cheese (Reduced Fat)
*Pepper (To Taste)

Directions:

1. Cook pasta according to package directions.
2. In a saucepan, heat Butter and Garlic until fragrant.
3. Add Milk and Cream Cheese and heat until melted.
4. Add Parmesan cheese and pepper. Cook and stir until blended and heated through.
5. Drain pasta, pour pasta into sauce, toss to coat. ENJOY!

Veggie Pizza

I love cucumber sandwiches so I made it into a pizza :)! You can top this will all your favorite raw veggies! All I had on hand was the cucumbers so thats all I used! Its great with cucumbers, tomato's, bell pepper's, and broccoli... I think this is a perfect combo veggie pizza! But for today we are going to do just the cucumber's:)!

(: Veggie Pizza :)


Ingredients:

Toppings: (choose 1 or All)
Fat Free Shredded Cheese (I use Cheddar)
Cucumber's; Peeled & Sliced
Tomato's; Seeded & Diced
Broccoli; Chunked
Bell Pepper's; Seeded & Diced

Crust:

Reduced Fat Crescent Roll; Lay on a sprayed cookie sheet. Roll out just a little. Bake according to Package until golden brown! LET COOL TIL COLD!

Sauce:

8oz Cream Cheese
1/2 Cup Fat Free/Reduced Fat Mayo
Dill Weed(TO YOUR TASTE, I love a lot, taste until its to your liking)
Salt & Pepper to taste
Refrigerate at least 3 hours, overnight is best!

Directions:
1. Bake Crust. Cool til Cold.
2. Spread with Sauce

3. Top with toppings! Top w/ a little more salt, pepper, and dill to taste!

4. Cut and ENJOY!!!

My 2 Month Blog Brake

Hey Everyone,

I hope you are all doing well! We are doing okay! I wanted to post and let every that I am sorry about the last 2 months! I was not planning on taking a break but with my camera in the shop, my mom finding out she has cancer, easter, ect. ect. ect. the list could go on for ever! Anyways I just had my mind preoccupied and other priorities!

What has been going on...?
My camera broke. It is currently in the shop and hopefully I will have it back by the end of May.

Late March and Early April my mom found out she has cancer in her uterus and on her cervix. She is having a Hysterectomy May 4th. At this time they will also make sure that cancer is not anywhere else. This has been so hard for me to deal with. My mom is my rock we have been inseparable sense the day I was born. Growing up with out a father made us super close, I don't know what I would do if I ever lost her :(. So please help me pray that things start getting better from here on out!!

On a happier note Easter was great! We had a egg hunt at church, Then egg hunt with a play group I joined, Also had a Egg hunt with Khloeys two friends that she adores Maddy & Rissa, A egg hunt at my Cousin JoAnn's along with a pig pickin', and Last but not least some family and friends came over to our house and we had a cook out and another egg hunt :)! Here are some pictures!














So, thats basically what has been going on and why I have not done any blogging. I have so many recipes to share with you all and I will be back at it asap! After moms surgery more then likely! I hope you all had a blessed Easter and were not affected by any of the storms! Here in NC I had tornado's touch down 15 to 20 mins from my home and the sites are so devastating to see here is more that is bind blowing to me...

Menu Plan: March 7th - 13th

Its Monday Yaw,

I have it has treated you all very well. It has been pretty good to me. Got some much needed cleaning done. Tomorrow is the BIG DAY, My cousin-in-law is having her 3rd baby girl! They are inducing her at 8am in the morning so before tomorrow is over Ms. Elizabeth Diane Naylor will be here! I am extremely excited because I get to be present during the birth this time. I missed it last time because I was having surgery the day she went in labor. Well its time to go start supper! Here is your Menu Plan!

Easy Chicken Quesadilla’s

May not be traditional but taste great!! Serve with a side of Mexican rice mmm you gotta winner winner Spanish dinner lol!

Ingredients:

1 Lb of Chicken; Cut in Strips
1 Tsp Paprika
1 Tsp Cumin
½ Tsp Garlic Powder
2 Tsp Goya Adobo All Purpose Seasoning
¼ Tsp Cayenne (Optional if you want a spice I leave it out)
1 Tablespoon Low Sodium Soy Sauce
1 Large Bell Pepper; Cut in Strips
1 Large Onion; Cut in Strips
Olive oil
Monetary Jack Cheese
4-6 Flour Tortilla’s it is really according to the amount of filling you put in to how many Quesadilla’s you actually get!

Directions:
1. Season Chicken with Paprika, Cumin, Garlic, Goya Adobo, Cayenne, and Soy Sauce. Let sit the long the better! For at least 1 hours!

2. Heat a pan with a little olive oil about a tablespoon. Brown Chicken. Remove from pan and set aside.

3. In the same pan drizzle a little more olive oil if needed and saute onions and peppers until they are soft and have some color!

4. Add chicken back in and combine.

5. Place a floured Tortilla in a hot pan with a little melted butter or just spray the pan with cooking spray like I did. Sprinkle with Cheese as much as you would like, then add in some of the chicken, onion, and pepper’s mixture! Fold over and cook for 3 mins on each side!
